The difference between “Gyokuro” and “Sencha” lies in the meticulous cultivation process. Fed with abundant organic fertilizers, Gyokuro tea bushes are shaded from direct sunlight using special coverings at least two weeks before harvesting. The leaves are mostly picked by hand, selecting only the top leaves from the bushes.
This shading method increases the concentration of amino acids that give the tea its sweet flavor, reduces the amount of catechins (bitter tannins), and produces Gyokuro’s distinctive aroma.
The ideal water temperature for brewing Gyokuro tea is between 40–60°C (104–140°F). This is very important, as brewing with boiling water causes the tea to immediately lose its sweetness and some of its vitamin C, while releasing bitterness.

Place the tea in a teapot.

Add water and let it steep for 2 minutes.

Pour all the liquid into a shallow cup to the last drop (this is very important).
When preparing tea for two or three people, pour the tea evenly into each cup in rotation without leaving any in the pot. The brewed leaves can be used again: simply add hotter water (70–80°C / 158–176°F) and steep for only 10 seconds.
